Roasted Veggies with Burrata & Chimichurri Sauce

Isn’t this dish just SO pretty? Ah, and it so good too. AND it is super easy to throw together. This meal is a great way to get a variety of veggies on your plate all at once. And the chimichurri sauce makes them taste that much better that even my toddler enjoyed it. Well, the burrata had something to do with that too. Stella LOVES burrata. Can you blame her?? You can add or omit whatever vegetables you choose too. I think this would also be good with prosciutto if you are into meat. Make it your own, post a pic and tag me in it on instagram! Ingredients:

  • 2 cups packed parsley leaves, finely chopped

  • 1 tbsp minced chives

  • 2 cloves garlic, minced

  • ¾ cup extra-virgin olive oil

  • 2 tbsp red wine vinegar

  • salt

  • 1 eggplant, sliced into cubes

  • 2 zucchini, cubed

  • 1 yellow squash, cubed 

  • ½ bunch asparagus, chopped

  • 1 pint cherry tomatoes

  • olive oil

  • Naan bread 

  • 2 balls of burrata cheese

Instructions:

  1. Preheat oven to 425.

  2. Combine the parsley, chives, and garlic in a food processor. Roughly chop…do not puree. Add in the olive oil and red wine vinegar. Season with a pinch of salt. Set aside.

  3. Prep all of the eggplant, zucchini, squash, tomatoes, and asparagus and lay them out onto a sheet pan. Drizzle with a generous amount of olive oil and toss well to coat the vegetables on all sides. Season with salt and pepper. Roast for a total of 45 minutes, checking on the veggies and rotating halfway through cooking.

  4. Cut the naan bread into triangles. Spray with olive oil cooking spray or coat the naan with olive oil. Add sea salt. Lay on a baking sheet lined with parchment paper. Once the veggies are done bake for 12 minutes on each side. OR heat a large skillet on medium heat with oil and light toast each side.

  5. Arrange all of the vegetables onto a large platter with the balls of burrata and bread alongside. Season the burrata with a pinch of salt. Drizzle the chimichurri over top the entire dish!

*You could also serve with a nice of hunk of delicious crusty bread. YUM.
