Taco Salad with Easy Salsa Stewed Beans & Avocado Lime Crema

This is one of those really easy meals that you can make at the drop of a hat. You most likely have all the ingredients you need lying around your kitchen. You could use the bean mixture as a filling for an actual taco or make nachos or quesadillas. Up to you!

Taste even better with a margarita :-)

Ingredients:

  • 2 cans black beans, drained and rinsed (or use a mix of pinto, kidney & black beans)

  • 1 cup tomato salsa (i use the old florida brand)

  • 1 tbsp chili powder

  • 1 tsp ground cumin

  • 1 tsp garlic powder

  • 1 tsp onion powder

For the Avocado Cilantro Lime Crema:

  • 1/2 avocado 

  • 1/2 cup plain greek yogurt 

  • 1/2 cup fresh cilantro

  • juice of 1.5/2 limes (my husband likes extra lime so we use 2)  

  • 1 clove garlic

  • salt and pepper to taste 

For serving:

Mixed Greens, Tortilla Chips, Mexican or Cojita Cheese, sour cream and additional avocado 

Instructions:

In a medium saucepan combine beans, salsa and spices.  Bring to a boil and then turn to low heat. Simmer mixture for about 5 -10 minutes, stirring occasionally. Slightly mash beans. 

Meanwhile in a food processor pulse together avocado, Greek yogurt, cilantro, lime juice and garlic until cilantro is finely minced. Season with salt and pepper to taste (if you want the sauce thinner you can add in 1 Tbsp water).

To assemble: Layer bean mixture on a bed of lettuce. Top with crunched up chips, cheese, sour cream and additional cilantro!
