Parmesan & Lemon Sheet Pan Shrimp

Ingredients:

  • 1.5 pounds of shrimp, peeled & tails off

  • 3 cloves garlic, minced

  • 1/4 red onion, minced

  • 1 tbsp of italian seasoning (make your own! so easy)

  • 1 lemon

  • 1 head of cauliflower

  • 3 bunches of broccoli (I like this dish with broccolini also)

  • 2 tsp Olive Oil plus more for the veggies

  • Parsley for garnish

*note: you could also just use cauliflower or broccoli. I use whatever I have on hand…both work well.

Instructions:

Heat over to 400. Line a large baking sheet with parchment paper. I had to use two sheets. Spread out the cauliflower & broccoli on sheets. Mix with olive oil, sea salt & pepper until evenly coated. Roast for 25 minutes.

While veggies are cooking, add shrimp to a bowl and mix garlic, red onion, italian seasoning and 2 tsp of olive oil together.

After 25 minutes, add the shrimp to the pan with the veggies. Bake for an additional 8-10 minutes. Once all is done, sprinkle with lemon juice and parsley. Mix it up and serve!
