Black Bean Burgers

Does anyone feel like they are ALWAYS cleaning these days? AND cooking. Everyone is like, “this is so great to be cooking more". No, I am over here doing what I have always done, but it just feels like it is MORE. More of the cooking, and with that comes more things to clean. Or maybe it is because we are always in the house these days so it gets dirtier or it is just always in my face. And if you know me, I am a clean freak and germaphobe. Thus I feel like I am always wiping down surfaces and disinfecting door knobs etc. Sigh. I think it is just that everyday life feels like so much harder in general. Life is just hard right now. But I focus on the positives and there is plenty, so really, I can’t complain. Life is so much harder for all of those on the front lines right now; doctors, nurses, grocery shop workers, maintenance workers, hospital staff, sick patients, families of sick patients, the unemployed, small business owners, and the list continues. If you are a frontline worker, thank you. Thank you for putting your health and your families health on the line every single day.

And now back to cooking…if we must. I have tried a lot of black bean burger recipes and they were all kind of dull & flavorless. Finally, I think I took some of my favorite ingredients & tips from other recipes and created this burger. The Worcestershire sauce and ketchup make it taste more like you’re eating a classic burger. The spices add some flare and over all it is pretty damn good. Serve with your favorite condiments and toppings like onion, tomato, lettuce and maybe a fried egg? Or go all out and eat it with a brioche bun. Now, you’re really living. Brioche is my jam.

Leftovers are great too especially on salads. Stay sane & safe everyone. Cheers!

Ingredients:

  • 2 (14 ounce) cans black beans, drained, rinsed, and patted dry

  • 1 Tablespoon extra virgin olive oil

  • 1 bell pepper or poblano pepper 

  • 1/2 of any large onion or 1 small yellow onion 

  • 3 garlic cloves, minced

  • 1 tsp ground cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon smoked paprika

  • 1/2 cup rolled oats 

  • 1/2 cup cheddar cheese (optional)

  • 2 large eggs

  • 1 Tablespoon Worcestershire sauce

  • 2 Tablespoons ketchup

  • pinch salt + pepper

Instructions

  1. Preheat oven to 325. Spread beans evenly onto a lined baking sheet and bake for 15 minutes until slightly dried out.

  2. Meanwhile, sauté olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes. Place in a large bowl or in a food processor with the remaining ingredients (cumin, chili powder, garlic powder, smoked paprika, oats, cheese, eggs, worcestershire, ketchup, salt, and pepper). Stir or pulse everything together, then add the black beans. Mash with a fork or pulse the mixture, leaving some larger chunks of beans.

  3. Form into patties– I made 6.

  4. Place patties on a parchment paper lined baking sheet and bake at 375 for 10 minutes on each side, 20 minutes total.

Top with your favorite toppings! Serve in a bun or eat alone or on a salad. They also make great leftovers throughout the week.
