Sheet Pan Honey Glazed Salmon with Green Goddess Sauce

This dish is so easy, BUT you could also easily make it for a dinner party to impress guests. You can always add roasted potatoes to make it more hearty too. Make it your own but whatever you do, make it! Promise, you will love it.

INGREDIENTS:

  • 1/4 cup olive oil

  • 4 salmon fillets (5-6 ounce each)

  • 1 tablespoon honey

  • 2 teaspoons smoked paprika

  • 2 teaspoons cumin

  • 4 cloves garlic, minced 

  • juice of 1-2 lemons

  • 1 pinch crushed red pepper flakes

  • cooked cauliflower rice 

GODDESS SAUCE:

  • 1 avocado, halved

  • 1/4 cup plain greek yogurt

  • 1 cup fresh cilantro

  • 1/2 cup fresh basil

  • juice from 1 lemon

  • 1 teaspoon cumin

  • salt 

INSTRUCTIONS

  1. Preheat oven to 425 degrees.

  2. Place the salmon on a plate and drizzle with honey. Add the paprika, cumin, garlic, lemon juice, crushed red pepper flakes, and a pinch each of salt and pepper. Drizzle with 2 tablespoons olive oil, rubbing the seasonings and oil evenly into each filet. Put salmon on a lined or rimmed baking sheet. Roast for 15-20 minutes.

  3. In the meantime combine all of the ingredients for the goddess sauce in a blender or food processor. 

To serve: Spoon some of the sauce on the plate. Top with cauliflower rice or regular rice and then the salmon. Mangia <3
