Super Saucy Korean Cauliflower Lettuce Wraps

You know what is really starting to bother me? Those who let politics or personal beliefs skew their judgements and opinions of people. I cannot stand how polarized this country has become, and I despise politics. Ah. It is such a mess. The debate last night? What a joke. I am not going to “get political”, but I do want to throw something out there for you to chew on (no pun intended) before you get to the recipe. Remember the commandment, “love your neighbor as yourself”? Well, it is about time everyone (me included) starts practicing that more in their daily lives. Thus, if someone is voting for the other candidate, you still treat them with respect. You do NOT judge. You treat them well, like you would want to be treated. I know it is hard, but most people really are good people. Cue, Luke Bryan’s song, “Most People Are Good”. Yes, I went there but you get it. And if they are voting one way then they probably truly believe in their core they’re making the best decision. Let it be. It isn’t your fight and you will not change their mind. You do you.

Ok, rant over! Onto more exciting things like today’s milestone. Stella actually peed in the potty! Yes, she will be 3 in a month, but don’t judge. This has been A STRUGGLE. I had tried everything and finally back in May around the time we did our IVF transfer, I just said F*** IT. One day, she will get it. Once she started school, I sat her on the potty throughout the day; before nap or bed. She does this at school with no luck. Her teacher actually told me today, “don’t worry, she will do this when she is ready”. SO, we still have a LONG way to go, but guys, this is PROGRESS. I also made a big enough deal about it in hopes she just wants to keep on going! Fingers crossed. Needless to say she is thrilled. Mainly because she finally was able to get the Elsa doll that has been sitting in the garage for 6 months for this VERY moment. Ok, now that we have covered following our commandments and potty training talk, let’s get to this super saucy cauliflower dish! This was inspired by my fave asian chicken wings from Hawkers. They serve them in a sticky korean bbq flavored sauce. SOOO GOOD. This recipe is obviously a healthier option. But when you feel like having a cheat, get those wings. In the meantime, this makes for the perfect weeknight dish. It is toddler and husband approved. You could probably also add some chicken into the mix if you want added protein. Just do 1 head of cauliflower instead of 2. I hope you guys enjoy! Please let me know what you think!

Super Saucy Cauliflower Lettuce Wraps

for the cauliflower:

  • 2 med-large heads of cauliflower 

  • olive oil

for the sauce:

  • 1 cup coconut aminos 

  • 1/4 cup coconut palm sugar 

  • 2 cloves of garlic, chopped 

  • 1-inch knob fresh ginger, chopped 

  • 2 tablespoons rice vinegar

  • 2 tablespoons of  sriracha sauce 

  • 2 tablespoons toasted sesame oil

  • 1 tablespoon of cornstarch

to serve:

  • 1 head of butter lettuce

  • crushed peanuts

  • spicy mayo

Instructions: 

  1. Roast the cauliflower: Preheat the oven to 425. degrees. Line 2 large baking sheets with parchment paper. Place cauliflower florets on the sheet and coat with olive oil spray or drizzle with olive oil- sprinkle salt and pepper. Bake for 30-40 minutes. 

  2. Make the sauce: Blend everything in a food processor or blender until smooth. In a saucepan bring to a boil and then let simmer over low heat until it thickens slightly.

  3. Once cauliflower is done, pour sauce directly onto the roasting pan – toss to combine.

  4. Arrange the sauced up cauliflower in lettuce cups. Top with extra sauce, crushed peanuts, scallions, and a drizzle of spicy mayo!

*Spicy Mayo: Just mix mayo with sriracha and there ya go, spicy mayo!
