Flourless Pumpkin Bread with Dark Chocolate

Pumpkin season is officially here! Even if it is a 100 degrees in South Fla, I love some good Fall baking. It is even better if the treats are on the healthier side too. Am I right? Cue in this Flourless Pumpkin Bread with Dark Chocolate Chips! Eat as breakfast, a snack or do what I do and save for a nighttime treat. Whatever you, make it. You will be happy you did.

Ingredients:

  • 2 cups old-fashioned or quick cooking oat flour

  • 1 (15 ounce) can pure pumpkin

  • 1/3 cup maple syrup 

  • 2 large eggs

  • 1 teaspoon baking soda

  • 1 teaspoon of cinnamon

  • pinch of sea salt

  • 1/2 cup dark Enjoy Life chocolate chips

Instructions:

  1. Preheat oven to 350. Line a 9x9 loaf pan with parchment paper.

  2. Combine all of your wet ingredients (pumpkin, maple syrup, eggs) in a large mixing bowl. Stir in your dry ingredients. Mix well until combined. Add in chocolate chips!

  3. Bake for 30-40 minutes until a toothpick inserted comes out clean.
