Flourless Pumpkin Bread with Dark Chocolate
Pumpkin season is officially here! Even if it is a 100 degrees in South Fla, I love some good Fall baking. It is even better if the treats are on the healthier side too. Am I right? Cue in this Flourless Pumpkin Bread with Dark Chocolate Chips! Eat as breakfast, a snack or do what I do and save for a nighttime treat. Whatever you, make it. You will be happy you did.
Ingredients:
2 cups old-fashioned or quick cooking oat flour
1 (15 ounce) can pure pumpkin
1/3 cup maple syrup
2 large eggs
1 teaspoon baking soda
1 teaspoon of cinnamon
pinch of sea salt
1/2 cup dark Enjoy Life chocolate chips
Instructions:
Preheat oven to 350. Line a 9x9 loaf pan with parchment paper.
Combine all of your wet ingredients (pumpkin, maple syrup, eggs) in a large mixing bowl. Stir in your dry ingredients. Mix well until combined. Add in chocolate chips!
Bake for 30-40 minutes until a toothpick inserted comes out clean.
