Easy Caramelized Onion Frittata + How To Caramelize Onions

 
 
 

It is really hard to mess up a frittata. I promise you. The best thing is how versatile they are. Add in whatever your heart desires. I love caramelized onions on anything and especially in a frittata. My aunt gave me the idea and I went with it. I bet if you added bacon it would be SO good. Easy Carmelized Onion Frittata

Ingredients

  • 6 large eggs of 8 eggs for a 12 inch skillet

  • 1/4 cup Plain Non Fat Greek yogurt or any milk

  • 2 garlic cloves, minced

  • 2 large onions, white or red (whatever you prefer- they are for carmelizing)

  • 2 cups of spinach, chopped

  • 1/3 cup crumbled feta cheese

  • 1/4 tsp of smoked paprika

  • salt & pepper

  • olive oil

  • butter

Add Ins or Variations:

  • Roasted Bell peppers

  • Sub Broccoli for spinach

  • add mozzarella, cherry tomatoes and basil to make it a caprese

Instructions

  1. Caramelize your onions first. I used 2. If making a bigger batch for other things, add more olive oil and butter.

    • Use a wide, thick-bottomed sauté pan. Coat the bottom of the pan with olive oil, or a mixture of olive oil and butter, if using (about 1 teaspoon per onion).

    • Heat the pan on medium high heat until the oil is shimmering. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan.

    • Let the onions cook for 10 minutes on medium high careful not to burn them. You want them to stick a little and brown so leave them alone without stirring to much in the beginning. You may want to turn your heat down. Everyone has a different stove so play around with it.

    • After the first 10-15 minutes lower the heat to medium low. Season with salt and pepper. Add more oil or butter if you notice onions are sticking. Scrape the pan every minute or so as the onions continue to cook and caramelize. You want all the brown bits!

    • Continue to cook and scrape for another 15 minutes or so- cook and scrape, until the onions are a rich, browned color. At the end of the cooking process you might want to add a little balsamic vinegar or wine to help deglaze the pan and bring some additional flavor to the onions.

      Store refrigerated for several days in an air-tight container.

    Frittata!

    1. Preheat the oven to 400°F.

    2. Whisk the eggs, yogurt or milk, garlic, and salt until well combined. Set aside.

    3. Saute your garlic in the same pan as the onions. Add in the spinach and cook on low until wilted. Add your egg mixture to the pan. Sprinkle on top with feta. Gently shake the pan to evenly distribute. Bake for 15-20 minutes until the eggs have set.
