Blackened Salmon Tacos with Basic Slaw

 

By now you know I am all about SIMPLE & easy recipes especially during the week. And it is a plus that my kids will eat them. Always a win however Jack is a wildcard. Minimal prep, minimal mess and tons of flavor make this dish a no brainer! Make it and let me know what you think!

Blackened Salmon Tacos

Ingredients for Salmon

  • 1.5 - 2lb salmon

  • 1 tbsp chili powder

  • 2 tsp paprika

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • 2 tsp brown sugar

  • 1. tsp cumin

  • 1 tsp kosher salt

  • pepper

Slaw

  • 1 package of shredded cabbage or cole slaw ( i use TJ’s)

  • 1/2 thinly sliced red onion

  • 1/4 cup chopped cilantro

  • juice of 2 limes

  • 2 tbsp of olive oil

  • salt & pepper to taste

Sauce

  • 1/3 cup sour cream or greek yogurt

  • Juice of one lime

  • 2 tbsp chopped cilanto or parsely

  • 1 tbsp of sriracha

Instructions

  1. Mix together the spices for the rub.

  2. Place salmon on a parchment lined baking sheet and pat dry with paper towels.

  3. Mist with cooking spray and sprinkle rub all over salmon. Using your fingers to pat it in all over the tops and sides.

  4. Broil for 5-7 minutes or until depending if you like it cooked well or medium. Jeff likes it super pink and the kids like it a little more cooked so I will pull a piece aside and let the rest cook a couple more minutes.

  5. Combine all ingredients for the sauce. And then make your taco!
