Egg Roll in a Bowl

INGREDIENTS

  • 1 tablespoon olive oil

  • 1 lb mild chicken sausage (or ground turkey/chicken/shrimp)

  • 1/2 onion, sliced

  • 2 cloves of garlic

  • 1 tsp ground ginger

  • 1 package of any cole slaw mix

  • 1/4 cup of coconut aminos 

  • 2 eggs

  • freshly ground black pepper

  • 1 teaspoon toasted sesame oil

  • 1 tbsp honey

  • chopped green onions & sesame seeds , for garnish

INSTRUCTIONS:

  1. Remove the sausage from the casing if it isn’t already. Spray a large skillet with cooking spray and turn heat to medium. Add the sausage,  and cook until no pink remains using a wooden spoon to break up the pieces. Once cooked through remove the sausage and set aside. 

  2. Heat the olive oil a large skillet over medium-high heat and sauté the onion, and garlic until onions begin to soften about 5-8 minutes.

  3. Add in the cole slaw mix, and coconut aminos, and a little water to steam the veggies. Cover the pan and lower heat. Cook about 10-15 minutes or until your desired consistency of the veggies. 

  4. Stir in the sesame oil and honey once vegetables are cooked. Make a well in the center of the skillet and add the egg. Scramble until done on low heat. Let cook for a few more minutes. Top with green onions, sesame seeds and crunched up peanuts if desired.
