Egg Roll in a Bowl
INGREDIENTS
1 tablespoon olive oil
1 lb mild chicken sausage (or ground turkey/chicken/shrimp)
1/2 onion, sliced
2 cloves of garlic
1 tsp ground ginger
1 package of any cole slaw mix
1/4 cup of coconut aminos
2 eggs
freshly ground black pepper
1 teaspoon toasted sesame oil
1 tbsp honey
chopped green onions & sesame seeds , for garnish
INSTRUCTIONS:
Remove the sausage from the casing if it isn’t already. Spray a large skillet with cooking spray and turn heat to medium. Add the sausage, and cook until no pink remains using a wooden spoon to break up the pieces. Once cooked through remove the sausage and set aside.
Heat the olive oil a large skillet over medium-high heat and sauté the onion, and garlic until onions begin to soften about 5-8 minutes.
Add in the cole slaw mix, and coconut aminos, and a little water to steam the veggies. Cover the pan and lower heat. Cook about 10-15 minutes or until your desired consistency of the veggies.
Stir in the sesame oil and honey once vegetables are cooked. Make a well in the center of the skillet and add the egg. Scramble until done on low heat. Let cook for a few more minutes. Top with green onions, sesame seeds and crunched up peanuts if desired.
