Butternut Squash Chicken Sausage Skillet

Can you believe Christmas Eve is one week away!!! EEK. This is like the Superbowl in our family. We go ALL OUT. There are way too many Christmas cookies, carb overload, and all the cheesy activities that are a must to do. I seriously LOVE it. So when I start to get stressed out about wondering how everything is going to get done, I remember that this is all for fun. It isn’t meant to be stressful ;-). It is even better too when you have a little one. Seeing the joy through her eyes is the BEST.

There is so much baking and merrymaking happening that it is a little difficult to find the time to actually make dinner. Cue this super easy and healthy skillet. Save time and buy the squash already cut (thank you trader joes!). And if you don’t want sausage then have ground turkey or no meat at all. Either way it is flavorful and delicious.

Butternut Squash Chicken Sausage Skillet

Ingredients:

  • 2 bags of trader joes butternut squash already cubed

  • Olive oil

  • 1/2 yellow onion diced

  • 1 lb chicken sausage ( I get mine from Whole Foods and take out of the casing to cook). You could just use links

  • 4 cups chopped baby kale

  • 2 cloves garlic, minced

  • 1 tablespoon fresh sage finely chopped

For the dressing:

  • 1 tablespoon maple syrup

  • 1 teaspoon apple cider vinegar

  • 1/2 cup dried cranberries

  • 4 ounces crumbled goat cheese

  • additional chopped sage for topping

Instructions:

  1. Preheat oven to 425 degrees F. Place butternut squash on baking sheet lined with parchment paper. Drizzle with olive oil. Toss to combine. Season with salt and pepper. Bake in preheated oven for about 25 minutes, until squash is soft.

  2. While squash is cooking, add about a tbsp of olive oil to a skillet over medium heat. Add onion and chicken sausage and cook until onion begins to soften, about 5-7 minutes.

  3. Add the kale, garlic and sage and cook until kale is wilted, about 4-5 minutes. Once squash has cooked, add them both to the skillet with the sausage and kale, and stir to combine. If your skillet isn't big enough, just add it all to a bowl.

  4. Mix together olive oil, maple syrup, and apple cider vinegar and drizzle over sausage and squash mixture, stirring to combine. Season with additional salt and pepper to taste!

    ** Top with cranberries, goat cheese, and more sage!
