Slowcooker White Chicken Chili

 
 
 

You want a no fuss meal that yields a ton and tastes great with minimal prep or dirty dishes? Here ya go. Throw everything in your slowcooker and boom! Everyone in my family loved this. If you want it a little spicier add in the chipotle chili powder instead of basic chili powder. It gives this is a kick. You could also use cream cheese instead of sour cream.

Slowcooker White Chicken Chili

Ingredients

Ingredients

  • 1 tablespoon olive oil

  • 1 yellow onion, sliced

  • 3 garlic cloves, minced

  • 1.5 lbs boneless skinless chicken thighs

  • 2 cups chicken broth

  • 2 (16-oz.) cans great Northern beans, drained and rinsed

  • 2 (4.5-oz.) cans chopped green chiles, undrained

  • 1 can of sweet corn

  • 1 tsp ground cumin

  • 1tbsp chili powder

  • 1 tsp dill

  • 1 tsp onion powder

  • 1/4 tsp smoked paprika

  • 1/3 cup sour cream + more for serving

  • tortilla strips, lime wedges, shredded Monterey Jack cheese

Instructions

  1. Throw everything but the sour cream (and extra toppings) into the slowcooker. Cook on low for 6 hours or high 3 hours.

  2. Once down shred the chicken with two forks, and then add in the sour cream. Let cook on low for 15 mins or so.

  3. DONE! Top with all of your faves.
