My Best Healthy & Hearty Chili

There is nothing that says GAME DAY like a big pot of chili on the stove! When I think chili, I always think Fall & Winter. It is such a comforting, simple and versatile dish! This is one of my favorite versions with Italian Chicken Sausage to give it a little kick. You can also make in the crockpot if you wish (see instructions at end of page). Serve up with corn bread for an even more special occasion like the Super Bowl. Even though, I would much rather pretend that isn’t happening this weekend. I’d rather focus on having this baby. Yes, I am still bitter over Green Bay’s loss. It shouldn’t have been that way. And if you know me, you know I am so over Tom Brady. And news flash to Patriot’s fans, your QB is Cam Newton. Even if he is one of the most obnoxious and underwhelming players, he is yours. Brady plays for the Bucs now. I didn’t root for the Vikings or the Jets when Favre left GB. I know many of you do not share this sentiment, so we can agree to disagree. This is my personal opinion. However, I do hope you love this chili. I think you will ;-)

My Best Healthy & Hearty Chili

Ingredients

  • 1 lb ground turkey (or chicken)

  • 1 lb spicy chicken sausage

  • 1 red bell pepper, diced

  • 1 medium yellow onion, diced

  • 3 cloves garlic, minced

  • 3 cups of diced tomatoes

  • 2 cups chicken broth

  • 1 can of kidney beans

  • 2 tbsp cooking fat

Chili Spices

  • 3 tbsp chili powder

  • 2 tsp ground cumin

  • 1 tsp oregano

  • salt and pepper

  • paprika - optional

Instructions

  1. Heat a skillet on medium heat with tbsp of the cooking fat (olive oil, ghee). Take the sausage meat out of the casing and put in pan. Using a wooden spoon break up the sausage meat into pieces until cooked through. Keep the grease from the sausage in the pan.

  2. Add in the onions & red bell peppers on medium heat. Saute until softened about 5-8 minutes. Then add in the garlic and stir in for about 1 minute.

  3. In the same skillet, add the ground turkey. (Add more oil if needed in the pan but I usually use the grease from the sausage) With a wooden spoon break up the turkey until cooked through. Next add in your spices.

  4. Add your sausage back to the pot along with the tomatoes, chicken broth, and kidney beans. Bring to a boil, then reduce heat and simmer for about 1 -2 hours or until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary.

    *Top with your choice of add ons- sour cream, cheese, avocado etc. 

To make this recipe in the slow cooker: Reduce the chicken broth to 1/2 cup and brown the sausage & turkey and onions before adding to the slow cooker. Cook it on high for 3-4 hours or on low for 6-7 hours.
