PB Power Bites

When Jeff travels now, I operate on two speeds; FAST & FASTER.  There is just too much shit to do between Stella, Lambeau and keeping up with life stuff in general. After rushing to make dinner last night while simultaneously keeping Stella occupied with a Baby Einstein dvd (those things are lifesavers), I felt super accomplished. I had time to take Lambeau for his evening walk before it was time for Stella’s bath/bedtime deal.  Lambeau is on leash, baby is on me in the carrier and we are ready to go.  As I am about to walk out the door, Stella vomits and I mean full on throws up everywhere; the floor, on L’s leash, and all over her and me obviously. Awesome.

In hindsight this isn’t a big deal, but in that very moment I wanted to scream. I am a type A person and I really like to try and do EVERYthing. Like give my little L his proper two walks a day. And sometimes it just doesn’t work. Cannot do it all, right?

Luckily Stella was perfectly fine. After I cleaned her up, called my mom and took her temperature I relaxed knowing she was ok and started cleaning the milk & rice cereal chunks out of my bra (isn’t that cute?) and scrubbing the puke soaked baby bjorn in the bath tub. #momlife. But then there is Lambeau, downstairs all by himself. Those of you who have dogs who are more like your kids will understand. I truly feel for him. He was here first and now all of a sudden there is this baby who has taken over. Between my husband, the dog, and Stella I feel like all three need my equal attention. That is hard. I cannot imagine what it will be like with #2… how do you moms do it?! I guess you just do. That is the thing, you can only do your best. Everyone including the pups will have to learn to adjust to the new normal, including me.

Needless to say I was ecstatic when Jeff walked through the door last night! I give single parents props. Parenting single is no easy feat.

Now that we have that settled, let’s talk protein balls! Since I made these little delights I have not been able to stop eating them! They are so easy and very versatile. You can add in whatever you like and use either chocolate or vanilla protein powder. Jeff is a huge fan too, and the double batch I made is almost gone…

The perfect pre/post workout snack or you could also eat them for dessert like me! 

Ingredients
  • 1 1/2 cups rolled oats
  • 1 1/2 cups peanut butter
  • 2 scoops vanilla or chocolate protein powder (i used chocolate)
  • 2 tbsp grade b maple syrup or honey
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt (i used pink himalayan)
  • 2-3 tbsp water, almond milk or whatever liquid you have if needed
  • 1/2 cup fill ins- chocolate chips, raisins, cranberries (whatever you prefer!)
Instructions
  1. Combine all ingredients (minus the liquid and the fill ins) in a large bowl.  

    If mixture is a little dry add in some liquid. I just used water. It will still be a little crumbly but that is ok. 

  2. Using your hands take about a tbsp and a 1/2 of the mixture and shape into a ball. Place the balls in a container and let sit in the fridge for an hour until they harden. 

    Continue to store in the fridge until they are all gone! 

Recipe Notes

I used chocolate protein powder but vanilla would be really good too. The next time I make them I will use vanilla. 

This is the organic protein powder I use from Costco! The same brand also has a vegan line. I was pleasantly surprised by how much I like it.

  1. These look delicious. I keep a stock of fropros since I struggle making it through a workout without having 1/2 of a fropro beforehand. Lite enough for my stomach and enough nourishment to do the job. I am excited to try these with almond butter.
