Italian Breakfast Pie with Sweet Potato Crust

Happy 4th of July week guys! This week I am sharing an impossibly easy breakfast dish. It is also pretty versatile and you can make it your own.

Italian Breakfast Pie with Sweet Potato Crust

I love a good egg casserole. While this is not technically a casserole per say, it is pretty similar. The sweet potato crust makes it a "pie" or more "quiche-like".  It is easy and versatile. Add in whatever veggies, meat, or no meat. Make it your own.  

Course: Breakfast
For the Crust
  • 2-3 sweet potatoes
  • grass ged butter or ghee
  • 6 eggs
  • 1/2 lb spicy italian chicken sausage or any type of protein like bacon
  • 1/2 onion, chopped
  • 1 cup diced tomatoes
  • 2 cups chopped veggie of choice (broccoli, brussel sprouts, spinach) (i used cooked broccoli)
  • parmesan cheese (optional)
For the crust
  1. Pre heat oven to 350 degrees. Peel and slice the sweet potatoes. Slice them thin. If you have a mandoline I suggest using that. (I do not and a knife worked fine)

    Coat a pie dish with butter or ghee. Fill the bottom with the sweet potato slices. For the edge of the dish, cut the potato rounds in half and fill the edges. Sprinkle with salt and pepper. Bake for 20 minutes. Once crust is done, turn heat to 375.

For the Filling
  1. Heat a large skillet over medium heat. Coat with a little oil. Add in the chopped onions and the sausage (removed from the casing). Using a wooden spoon break up the meat as it cooks along with the onions in the pan.  Set aside. 

    (If using bacon, cook that first then saute the onions)

  2. In a bowl, combine the eggs, tomatoes, broccoli, salt & pepper. Then add the sausage and onion mixture. 

    Pour egg mixture over potato crust. Top with parmesan cheese, if that's your thing.

    Bake for 35 minutes at 375. Mangia <3
