Herb Grilled Shrimp Skewers with Grilled Veggies

Hey guys! Did anyone see the Oscars last night? I only watched the 1st half hour and caught the highlights this morning. In my opinion though the best part of the whole show was Justin Timberlake’s opening act. WOW. Best Oscars’ opening ever! That song is one of my all time favorites and he is so talented. I could watch him for days…yes, days. It was such a great way to begin the evening. Nothing spreads positive energy like great music and dancing. You couldn’t help but smile and want to get and sing along. It was like he gave the whole audience a dose of Zoloft. It seems like the whole night was a huge success for Hollywood until the last award… Watching the clips this morning, I was in shock. Those poor people from La La land. It’s like here is your award. Wait, just kidding! Ouch. I would not like to be the person responsible for that slip up this morning.

Enough about Hollywood, let’s talk reality now. It’s Monday and a start of a new week. Maybe you ate poorly this weekend or over imbibed in some alcoholic beverages. That is ok. Make today a fresh start and realign your plans and schedule to fit your goals. And when next weekend comes around maybe you only have 1 cheat night instead of eating crappy every single meal. It is all about balance guys. Mondays become a lot easier once you embrace a healthy lifestyle. Trust me.

I am inundated with homework for class tonight, so I better get going. Even though I feel like I could sit here and write for days! My books are calling my name… yuck.

Herbed Grilled Shrimp Skewers with Grilled Veggies

Grilled shrimp is one of my favorite things. This marinade only requires a few ingredients but it is enough to make these skewers amazeballs. 

Course: Main Course
Servings: 3 people
  • 1.5 lbs large shrimp
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp oregano
  • 1/2 tsp dried parsley
  • 1/3 cup extra virgin olive oil
  • Juice of 1 lemon
  • pinch of sea salt
  • 3 zucchini squash
  • 3 yellow squash
  • 2-3 tbsp extra virgin olive oil
  • seasoning mix of choice (i used borsari)
  1. Mix all of the ingredients for the marinade in a small bowl. Add the shrimp and stir to coat. Let shrimp sit in the marinade for about 20 minutes. 

  2. While shrimp is marinating, start cutting the squash. After discarding the ends, cut the squash in half, give you two pieces. Take each piece and depending on the thickness, cut into 3. This is how I prefer mine cut but feel free to slice as you like! 

    In a small bowl mix together the olive and seasoning mix.  Brush onto the veggies, coating each side. 

  3. Once shrimp is ready add to the skewers. 

    Heat grill to med high heat. Grill 5 minutes on each side or until lightly charred and tender. 

    Once veggies are done, heat grill to high heat. Add the skewers cooking about 3-5 minutes on each side. Making sure they get a little charred as well. 

Recipe Notes

* I served with cauli-rice but of course you don't have too! I just wanted to add some extra veggies.  

*I would recommend cooking the veggies on the grill first. Then adding the shrimp. If your grill is big enough though to do them both at once then go for it!
