It’s Friday! Woot Woot. You know those weeks where you feel like you did so much but still got nothing accomplished? Well, I am having one of those and it is beyond frustrating! I am having so much fun with this blog, but the back end of things is tough. I have no idea what I am doing when it comes to coding and pages and all that crap. I am the most technology inept person. Needless to say I find myself spending hours upon hours staring at my computer screen to figure out one aspect at a time for this blog and then come to realize it is all wrong. Back to square one I go! It could be a lot worse and I am lucky I have the time. I just ask you for patience.
What I do know for sure though is that my recipes are always on point for you. Like these simple and tasty fish tacos. I love the color the salsa adds to this dish. It is like summer all in one plate!
I love fish tacos! These are cheap and easy to make. I swapped the taco shell for lettuce. There are some great gluten free and healthier taco options available though like my favorite siete food tortillas!
- 1 lb 1lb of a meaty white fish (i used mahi)
- 2 tbsp cilantro, chopped
- 1/3 cup olive oil
- Juice of 1/2 lime
- 1 tbsp chili powder
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Pinch of salt
- 1 8 oz package of cole slaw mix
- 1/4 cup Paleo Mayo (I use the PrimalKitchenFoods brand
- 2 tbsp apple cider vinegar
- 2 tbsp diced red onion
- 1/2 tsp dill weed
- 1/2 tsp garlic powder
- dash of sriracha
- salt and pepper
- Salsa (i used fresh mango salsa)
- 1 Avocado diced
- sour cream
- Butter Lettuce or Romaine (I used butter lettuce)
- Gluten Free or Paleo brand Tortillas
Combine all of your ingredients for the fish marinade together in a bowl. Sprinkle fish with a pinch of salt. Add fillets to the bowl and let marinade for 15-20 minutes.
While the fish is marinating, mix together the slaw and let sit. Dice your avocado and arrange any toppings you would like to use.
Heat a grill or a grill pan to med-high heat. When the 15-20 minutes is up, add the fish to the grill or pan and grill for 4 minutes on one side. Flip to other side and let cook for 30 seconds to 1minute. Take off the grill and let rest for 5 minutes before serving.
Top lettuce leaves or tortillas with a bed of slaw, the fish, and then the toppings. Yum!
Mix together all of the ingredients besides the slaw in a bowl. Add in the slaw and toss until all the cabbage is coated with dressing. Let sit at least an 30 minutes before serving. The longer it sits the better!
*Since I didn't use tortillas I added some cauliflower rice to this dish to make it a little more filling. It tasted great! Like always, I encourage you to let your creativity flow and make each dish your own.
