Buffalo Chicken Burgers

Oh my goodness…this teething thing is NO joke.  Stella was never a very fussy baby unless it was between the hours of 5-6:30pm (bedtime).  Now enter teething and unless I am holding her she is whining/screaming almost constantly.  Please tell me this gets better? Or at least comes on waves? For now I am thankful for the baby carrier…it is the only way I get dinner on the table. Oh, and I am also thankful for good nap days too!

Speaking of naps, yesterday I whipped these Buffalo Chicken Burgers up in between Stella’s 2 naps yesterday. They are really easy and packed with flavor.  You can also add in some more vegetables to your burger mix too like carrots and celery!

Buffalo Chicken Burgers

If you know me, you know I am a huge buffalo chicken fan. Add a little blue cheese and it is perfection! I am always coming up with endless combos of how to use buffalo sauce. Insert: these delightful burgers. Low cal and easy to make double! 

Ingredients
  • 1 lb ground chicken thighs
  • 1/3 cup red onion, diced (about 1/4th of a medium sized onion)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup hot sauce (use tessemae's or franks red hot)
  • 1/2 tsp dried parsely (1 tbsp if using fresh parsley)
  • 1/2 tsp paprika
  • 1/4 cup coconut flour
  • 1/2 cup blue cheese crumbles (you can omit if dairy free)
  • a dusting of cayenne pepper to add a little kick (add more if you like it spicier!)
Instructions
  1. Combine all the ingredients (except for the blue cheese) in a large bowl. Mix well. 

    Add in blue cheese crumbles. 

  2. Form into patties. Ilb of ground chicken gave me 4 good size burgers. Cover and let refrigerate for at least 20-30 minutes. 

  3. Heat a grill pan or a regular skillet on med-high heat. Add a tbsp of cooking fat (i used ghee butter) and let get hot. 

    Once pan is hot (sizzles when you drop water on it) add your burgers. Do not overcrowd the pan. Do in batches if necessary. 

  4. Let cook 3-4 minutes on each side (depending on thickness) or until internal temperature reaches 165.  

  5. Once burgers are done, top with additional blue cheese crumbles and serve however you would like! I ate mine bunless with veggies & a side of sweet potato fries!

Recipe Notes

Feel free to add extra veggies into your burger mix too like diced shredded carrots, chopped chives, and diced celery.
